2021 Semillon

We harvested our Semillon on Oct. 2nd. The fruit had attractive acidity and clean mineralaity. This vintage is 100% Semillon.

The grapes were crushed directly to the press after our crews hand-picked the grapes. Cold settled for 24 hours and then transferred to French oak cooperage for fermentation and 5 months of aging.  (Vegan Friendly)
